Butter Bean Salad with Tomatoes and Arugula.



1 can of organic butter beans
150g cherry tomatoes cut into 1/4
1 red onion sliced finely
3 big handful arugula
2 tbsp extra virgin olive oil
Juice from 1/2-1 lemon all after taste
Salt & pepper


Butter Bean Salad with Tomatoes & Arugula



Drain and rinse the beans and let the dry a bit while you prepare the rest.
Cut the tomatoes into 1/4 and half the red onion and slice it finely.
Mix butter beans, tomatoes and onion together on a serving plate, add the olive oil and lemon juice and mix well seasoning with salt and pepper when all is well mixed and the flavor is to your liking, mix in the arugula just before serving let it be mixed well with the other ingredients and ready to serve.

Serves 3-4
