Ingredients:
500g Brussel Sprouts, rinsed and halved
2 tbsp Extra virgin coconut oil
1/2 cup raw almonds, roughly chopped
2 cloves of garlic, finely chopped
1/2 cup pomegranate seeds
1 bundle fresh coriander, finely chopped but keep some leaf for garnish
Salt & Pepper

Process:
Heat a big frying pan with coconut oil, when warm add the brussel sprouts and let them cook for a while until they start getting some golden edges and softened a bit. Add the garlic and the chopped almonds cook until the brussel sprouts are to your liking. Before serving add the chopped coriander and pomegranate seeds and seasoning with salt and pepper.
Place it on a serving plater and garnish with some fresh coriander leaf.
