1 whole organic/free-range chicken
5-6 organic/free-range chicken wings
2 organic lemons
15 cloves of garlic
6-8 sprigs fresh rosemary
400g cherry tomatoes
1-2 red onions, cut into pieces
Salt & pepper
Preheat oven to 200ºC
Bring a pan with water to boil, place the 10 cloves of garlic and 2 lemons in the water and cook for 5 minutes. Place the garlic and lemons in a colander to drain.
Make the chicken ready, rinse the inside and dry it with paper towels. Seasoning with salt and pepper inside the chicken and stuff the chicken with the cooked garlic and lemons too and some of the rosemary sprigs.
Take a baking tray drizzle some olive oil in and place the chicken in it, place the chicken wings, tomatoes the rest of the uncooked garlic, red onions and the rest of the fresh rosemary. Drizzle some olive oil over the chicken and the tomatoes seasoning with salt and pepper.
Cook it in the oven for +1 hour depending on the size of the chicken.
Have a nice salad nest to the chicken.
