2 hard boiled eggs, cut into small dices
1 tbsp real mayonnaise
1/2 tsp curry powder
1 bundle of cress
Salt & pepper
4 slices of paleo bread: https://kleankitchen.net/2016/02/24/paleo-bread/
Mix mayonnaise with curry powder and smashed avocado together, seasoning it with salt and pepper add all most all the cress except a bit for decoration.
Let it sit for 10 minuets so it gets al the flavours together.
Toast the bread if preferred, place the egg salad on the bread and seasoning with som extra cress and pepper.
