1tbsp organic virgin coconut oil
1 tsp ground cumin
2 medium sized Zucchinis, cut lengthwise and cut it into pieces
1 big red onion, halved and thinly sliced
1 gloves of garlic, finely chopped
1 organic fennel, halved take out the stalk and sliced, keep the top for garnish
3 big handful frozen green peas
2-3 handful baby spinach
Salt and pepper
Heat coconut oil on a frying pan, add the cumin and roast it for a few minutes.
Place the zucchini and red onion on the warm pan and fry for a while until the zucchini and onion gets a bit of color, add the frozen peas, fennel and garlic and fry for a few minutes until the peas are thawed, add the fresh spinach, salt and pepper and mix it a bit, just before serving use the top from the fennel as a garnish.
