Ingredients:
2 medium size organic Cauliflower, cut into rice size in a blender or shop on a board
1 big tsp coconut oil
1 tbsp ground cumin
1/2 tsp ground chili/ half a fresh chili chopped
2 small shallot onions, finely shopped
1-2 cloves of garlic, grated
1 big tbsp ground turmeric/curcumin
1 big handful toasted pumpkin seeds
1 bundle fresh mint finely chopped
Juice and zest from 1 organic lemon
Salt and pepper

Process:
Heat up a big pan to medium heat and add the coconut oil, when oil is melted add the cumin and chili and fry for a few minutes. Add the finely chopped onion and garlic and fry again for a few minutes until onion gets soften, add the Cauliflower rice and cook for a while until the cauliflower gets soften, add the turmeric/curcumin and mix well. When you feel the “rice” are ready add the lemon juice and zest, mint, pumpkin seeds, salt and pepper. Keep some of the mint and pumpkin seeds for garnish.
