Chicken Tikka Masala with Cauliflower Rice and Cucumber Topping

Ingredients:

 

4 organic/free range chicken breast (600-700g), cut into pieces (strips 5-8 cm)

Tikka Masala marinade:
1 tub greek yogurt 0% (170g)
Juice from 2 limes
10 cm fresh ginger, finely chopped
3 cloves of garlic, finely chopped
1 tbsp ground turmeric
1 tsp ground cumin
1 tsp chili powder
1 tsp onion powder
2 tbsp Garam Masala spice
Salt and pepper

Sauce:
1 tbsp organic virgin coconut oil
1 big yellow onion, finely chopped
3 cloves of garlic, finely chopped
8cm fresh ginger, finely chopped
1 tbsp ground turmeric
100-150ml chicken bone broth or chicken stock
1 can of organic coconut milk
2 tbsp coconut flour
Salt and pepper

Topping:
1 cucumber, grated and drained
1 tsp sumac (optional)
A pinch of chili flakes and chopped fresh coriander or parsley

Cauliflower Rice:
1 big (2 small) head of cauliflower, blend so it looks like rice
2 tbsp coconut oil
3 tsp ground cumin
Salt and pepper

Process:

 

Mix all the ingredients for the marinade together and put the chicken breast into the marinade and mix it well. Place in the fridge covered for minimum 2 hours.
Heat the oven at 200º Celsius, place the chicken and marinade in an ovenproof tray and cook for 20 minutes.
Heat the coconut oil in a big pan and fry the onions, garlic and fresh ginger together, add the rest and let it cook for 5-10 min until a nice consistency, add the cooked chicken and yogurt/spice marinade. Let it simmer for 10 min under low heat and seasoning with salt and pepper.

Heat a pan and place the coconut oil, when warm add the cumin and fry for a few minutes before adding the cauliflower, let it cook until tender and it gets some color, seasoning with salt and pepper.
