Egg Wrap with Chipolte Beef and Cabbage Salad

Ingredients:

 

500g organic grass feed minced beef
1 organic red onion, finely chopped
1 clove of garlic, finely chopped
1 red chili, finely chopped
1tbsp chipotle salt
1 tsp dried oregano
1 tsp smoked paprika
2 tbsp tomato paste
1 tbsp ghee or butter

Salad
1 organic red pointed cabbage, finely sliced
2 handfuls organic baby spinach
2 handfuls organic chopped kale
1/2 pomegranate seeds
2 tbsp extra virgin olive oil
1 tsp lemon juice
1 avocado

Wrap:
6 eggs

Process:

 

Fry the onion, garlic and chili until softened in ghee or butter, add the beef and stir until almost cooked. Add the chipotle salt, dried oregano, smoked paprika and tomato paste. Seasoning with salt and pepper.

For the salad mix all ingredients well and add the olive oil,  lemon juice, salt and pepper.

2 eggs beaten in a bowl, pour over medium warm frying pan, cook until firm and flip it for 1 min. (1 wrap)

Place some of the salad and beef inside the wrap and fold the wrap, place some extra salad on the side.

Serves 3
