Gluten Free Banana, Apple and cinnamon Muffins

Ingredients:

 

1,5 ripe banana, mashed with a fork
5 eggs
2 tbsp Manuka Honey or regular honey
1 apple, peeled and chopped
2/3 cup of Buckwheat flour
1 tbsp baking powder
1 big tsp ground cinnamon
1 tsp ground cardamom
A pinch of salt
3 tbsp chopped unsalted pistachio nuts

Process:

 

Preheat the oven to 180º Celsius.
Place the muffin paper liners into the muffin tin.
Whisk Banana, eggs and honey together in one bowl.
In another bowl whisk buckwheat flour, baking powder, cinnamon, cardamom and salt together.
Mix the banana and eggs together with the dry ingredients, then fold the small apple pieces and pistachios into it.

Put the batter into the muffin liners and bake the muffins for 25 – 30 minutes.
