Chicken Meatballs with Broccoli, Fresh Thyme and Dijon Mustard

Ingredients:

 

400g minced organic chicken
1 small organic broccoli, finely chopped
1 small shallot onion, finely chopped
1 tsp dijon mustard
1 organic egg
Fresh thyme
1/4 tsp chili powder
Salt & pepper
Butter/coconut oil to fry in

Process:

 

Mix it all together and let it rest for 30 minutes in the fridge before frying.
Fry under medium heat until cooked through.
I sometimes add goat feta cheese (100g) to the mixture.

I always do 2-3 portions so I have extra and they are great as a snack.
