1 big sweet potato around (300g)
300 g pitted dates, cut into 3 pieces
Zest from 1 organic orange
60 g raw cocoa powder
1 tsp baking powder
2 tsp vanilla essence
2 tbsp honey
90 g coconut flour
75 g buckwheat flour
Coconut oil for greasing the baking tray.
Preheat the oven for 160º Celsius for 30-35 minuets
Cut the sweet potatoe into pieces and cook in boiling water until tender.
Soak the dates with boiling water while the sweet potatoe is cooking. Drain the potato and dates and cool off for a while. Blend the potatoe and dates until a smooth.
Mix all the dry ingredients and add the potato and dates mixture with honey, vanilla essence and orange zest. Add the eggs at the end and mix well. Place the batter into a greased baking tray and into the warm oven.
If you would like a more protein rich cake, replace 15g of coconut flour with 1 scoop protein powder ( I use Sunwarrior Vanilla)
