Ingridents:
600g organic grass feed minced beef (optional minced chicken)
2 organic onions, finely chopped
4 cloves of garlic, finely chopped or grated
3 carrots, chopped into small dices
1 can organic tin tomatoes
3 tbsp tomato concentrate
1 can of organic black beans
125g corn kernels
1 red bell pepper, cut into small dices
2 tsp grounded cumin
1 cinnamon stick
1,5 tsp chili powder
1 fresh red chili, finely chopped
2 tbsp extra virgin olive oil
1 organic big or 2 small romain lettuce, chopped
4-6 organic spring onions, chopped
8-10 organic cherry tomatoes, chopped
Skyr or greek yogurt, topping

Process:
Heat the pot with olive oil add the onions, garlic and carrots and fry for a few minutes. Add the cumin, chili powder and cinnamon stick fry again for a few more minutes. Brown the meat in the mix and when the meat is almost cooked add the tin tomatoes and tomato concentrate with some salt and pepper, let it cook for + 20 minutes. 5-10 minuets before serving add the black beans, corn kernels and fresh chopped chili. Seasoning with salt and pepper and remove the cinnamon stick before serving.
Place the lettuce in the bottom of the serving plate/bowl, and add with the black bean and beef stew, top with skyr, tomatoes and spring onion. If you handle rice well serve this dish with some basmati rice too.
