Salmon with Wild Rice, Basmati Rice and Vegtables.

Ingredients:

2 pieces of salmon
Juice from 1 lime
Salt and pepper

60g uncooked Basmati rice
30g uncooked wild rice

100 g cherry tomatoes, halved
1 red bell pepper, copped
1 red onion, copped
5-7 cm fresh ginger
150 g snap peas
2 big handful baby spinach
1 tbsp coconut oil
1 tsp crushed cumin
Salt and pepper

Dill
Lime

 


 

Process:

Cook the 2 different rice according to instructions and then mix them when they are cooked.
Preheat the oven to 170º Celsius.
Drizzle some olive oil in an ovenproof tray and place the salmon and squeeze the juice from the lime on top of the salmon and seasoning with salt and pepper.
Heat a frying pan with some coconut oil, place the tomatoes, bell peppers, onion, cumin and ginger and fry for a few minutes. Add the snap peas and and rice and cook/fry for a few more minutes. To finish off add the 2 handful spinach to the mixture and cook until the spinach is a bit soft. Seasoning with salt and pepper.

Place the rice and vegetables mixture on a plate and place the salmon on top and drizzle some copped dill and juice from a lime.
