Ingredients:
1/2 watermelon, cut into small squares
250g Halloumi cheese, fried on a pan/grill
150g fresh green peas
1 red onion, finely sliced
1 handful fresh mint, chopped
2 handful arugola
3 tbsp olive oil
Salt and pepper
Process:
Mix it all except the arugola and Halloumi cheese in a bowl, place most of the arugola on a serving plate and pour the watermelon salad on the plate and mix it with the rest of the arugula.
Slice the cheese and fry the it on a pan, cool of a bit off, cut into 2-3 pieces each slice and place on the salad.
