Ingredients:
1/2 cup coconut flour
1 tsp cardamom
1 tsp cinnamon
1 tsp baking powder
1/4 tsp salt
1 tsp vanilla extract
4 eggs
3 mashed bananas
4 tbsp coconut oil, melted
4 tbsp honey or any other syrup of your choice
1/3 cup of coconut flakes
Process:
Preheat the oven to 175º Celsius
Whisk eggs,coconut oil, honey and vanilla extract together in a mixing bowl, add the mashed bananas. Mix all the dry ingredients together (coconut flour, cardamom, cinnamon, baking powder and salt) except the flakes of coconut, mix the dry ingredients with the wet ingredients with a spatula, stir until combined, add the coconut flakes and mix it with the rest.
It makes 14 medium size muffins, bake for 20-25 min, use a skewer to see if cooked through.

If you make a banana bread instead of muffins, bake for around 60 min use a skewer to see if cooked through.

I added 125g organic blueberries in the batter for the Banana Bread, fold the blueberries into the mixture as the last thing before placing it in the bread tin.
