Ingredients:
400g plume cherry tomatoes (halved)
1 cucumber I small pieces without the middle
250g halloumi cheese
1 small red onion finely sliced
1 bundle coriander, finely chopped
1-2 tbsp olive oil
Process:
Slice the halloumi cheese and grill or fry it until it’s warm all the way through, cut each slice into 2-3 pieces.
Place tomatoes and cucumber on a serving plate mix it around add the onion ring and the halloumi cheese mix carefully and drizzle the olive oil salt and pepper.
Garnish with the coriander, if you not are a big fan of coriander you can replace it with parsley.
