1-2 shallot onion finely chopped
600g frozen green peas
1/2 liter of chicken broth or a good chicken stock
1 big bundle of watercress
Ghee or butter
Salt and pepper
Fry the onions in 1 tbsp ghee or butter until clear color, add 300g of frozen peas and the chicken broth cook for 10-15 min at medium heat.
Add the watercress and the rest of the frozen peas and cook NOT BOILD the soup you will loose the nice green color.
When watercress and pea have cooked for 3-5 min add some salt and pepper, Hold back on the salt depending on the chicken broth/stock. Remove from stove and blend it the pot or in a blender. If you use a blender only fill it up to 1/2 and do it over 2 times, because the warm soup might spill all over you and the table.
