800g green asparagus
3 hardboiled eggs
100g fried bacon
1 handful finely chopped parsley
2 tbsp olive oil
Juice from 1/2 lemon
Salt and pepper
Place the asparagus in a ovenproof tray drizzle some olive oil over and some salt. Cook in the oven tab 180º Celsius for 10-15 min, you still want the asparagus to have a bite.
Chop the eggs into small pieces.
Fry the strips of bacon until crispy and place on a kitchen paper.
Serve the asparagus with the eggs and crumble the bacon on top of the asparagus and eggs.
Garnish with olive oil, lemon juice, parsley, salt and pepper.
