Ingredients:
600g salmon
1-2 red pepper
250g snap peas
1 small head of broccoli (small florets)
5-7 cm fresh ginger grated
1 small shallot onion finely chopped
1/2 red chili finely chopped
Fresh coriander for garnish
Juice from 1 lime
2 tbsp olive oil
1-2 tsp of roasted sesame oil
200g soba (buckwheat) noodles
Process:
Preheat oven to 165º Celsius. Place salmon in a baking tray with some salt and pepper. Bake for 15 min or until almost cooked through.
Boil the noodles according to the packet, drain and place back in the pot pour the lime juice and olive oil over and mix.
Fry the ginger and onion in some of the sesame oil together until softened and pour over the noodles.
Slice the peppers and snap peas length ways, fry also in some sesame oil and pour over the noodles.
Fry the broccoli until satisfaction also in sesame oil, pour over and mix it all.
Place in on a serving plate and break the salmon up and place on top of the noodles.
Garnish with fresh coriander.
