Roasted Chicken with Lemon and Rosemary

Ingredients: 

1 whole organic chicken
3 organic lemons in quarters
4-6 cloves of garlic
3-4 sprigs of rosemary
Olive oil
Salt and pepper

 


Process:

Preheat the oven at 175º Celsius
Rinse the chicken inside with cold water and get it all clean inside. Place the chicken on some kitchen towel and dry it on the outside. Place the chicken on a baking tray and seasoning it with salt and pepper inside, then fill the chicken up with the lemons pieces, the whole garlic cloves and rosemary sprigs. Drizzle with some olive oil on the chicken and seasoning with salt and pepper.

Place it in the oven for about 1 hour to 1h 15 min depending on the oven.

Let it rest for 15 minuets before carving the chicken.

Serve it with some nice green salad.

NB: Keep the carcass, can freeze it for later use to do a chicken bone broth, so when you have a few of them you have enough to do a broth.
