Egg Frittata with Broccoli, Leek and Feta

Ingredients:

1 head of broccoli
1 leek, finely sliced
5 eggs
1 tbsp physslium Husk powder
50g crumbled feta
5 sundried tomatoes, chopped fine
1 small bundle fresh parsley, finely chopped
1 tsp smoked paprika
Salt and pepper

 


Process:

Steam the broccoli in 2-3 minutes and cool of a bit. Mash the broccoli, beat the eggs in a bowl together, add the mashed broccoli, leek, feta, sundried tomatoes, physslium (husk), parsley, smoked paprika, salt and pepper.

Pour into muffin forms and bake for 20 minutes at 200º Celsius.
