Taco with Little Gem Lettuce Shells and Black Bean Salad

Ingredients:

400g organic minced beef/chicken
40g taco seasoning (homemade / Santa Maria)
3 little gem lettuces
100g plume cherry tomatoes cut into dices
1 1/2 Avocado shut into small dices
1 little red onion/ 3 spring onions cut into small pieces
Cheddar or Red Leicester cheese grated
greek yogurt

 


 

Process:

Fry the meat on a hot pan and when all is brown/cooked and the seasoning, let it cook for a few minutes then add a splash of water and cook until water has evaporated.
Rinse the lettuce leaf with water and dry with kitchen towel and place on a plate. When meat is ready place a spoonful of meat on each leaf, then add the tomatoes, cheese, avocado, onions and finish off with a small tsp of yogurt.

 


 

Black Bean Salad

Ingredients:
200g black beans (soaked over night, rinse with water a few times, cover with water and simmer for about 1 hour)
Juice from 1 lime
1-2 red bell pepper cut into small dices
1 small bundle of fresh coriander
2-3 tbsp olive oil
Salt and pepper

Mix all ingredients to the black bean salad and taste it with salt and pepper before serving.
