1 small head of cauliflower
1 small head of romanesco cauliflower
1 bundle of radishes
Zest from 1 lemon
1/2 bundle of flat leave parsley
1 red onion finely sliced
4-5 tbsp olive oil
1-2 tbsp apple cider vinegar
Salt and pepper
50-75g of salted almonds
(125g salt in boiling water, cook for 5 min then dry/cook in oven for 15 min at 150 degrees)
Make small pieces of the 2 cauliflowers, cut the radishes into small slices, chop the parsley fine and grate the zest from the lemon and red onion.
Mix the olive oil, apple cider vinegar salt and pepper together well, add the vegetables into the dressing.
Chop the almonds rough and sprinkle over the salad just before serving
