Ingredients:
2 eggs
3 slices of smoked salmon
1 tbsp. skyr/greek yogurt
½ avocado
1/4 red onion sliced
handful baby spinach
Salt & pepper
Process:
Grease pan with coconut oil or butter – turn heat up high.
Mix the 2 eggs in a bowl and pour it into a hot pan and turn down the heat to low, when it can be flipped, flip to the other side.
Put the wrap on a plate when cooked to cool off a bit.
Spread the skyr/greek yogurt on the wrap, kind of a glue too. Place the salmon, onions rings, avocado spinach, salt and pepper.
Roll the wrap up tight and cut in half and serve it with some sweet potato mash and steamed broccoli on the side.
